Veggie Packed Sandwich

Vegan junk food can be amazing and delicious and great. All the un-meats and the un-cheeses that the world has to offer. Sometimes, you just want veggies. Veggies on veggies.

This sandwich is such a quick put together for that night when you really want something fresh and light, but also tasty and nutritious.


Your choice flavor hummus

1/2 of a yellow bell pepper

1/2 of a red bell pepper

Alfalfa Sprouts

Sunflower Seeds

1/2 an Avocado

Small handful of baby spinach

2 slices of a beefsteak (ew, I know) tomato

Slices of red onion (however much you like)

Vegan rosemary bread (or your favorite bread)


First, Slice and toast your bread.

Next, pop two horizontal slices of red pepper into your toaster for 5-7 minutes.

Put your sandwich together however you like.

This is what I did:

From bottom to top: garlic hummus, then sunflower seeds, baby spinach, roasted red pepper, tomato, yellow pepper, avocado slices, tomato slice, more hummus, more sunflower seeds and finally alfalfa sprouts.

Suggestion: don’t forget red onion like I did, had I remembered to purchase one I would have pickled it in red wine vinegar to give it a little extra zing.
