Vegan Nachos

These are so good, game day, award show, relaxing on sunday with a vegan beer (barnivore.com) nachos. It was not until I started experimenting with cashews, and nutritional yeast that I realized how good vegan cheese can be.  This recipe does feature some store bought vegan cheese, chao which is a field roast brand and is quite good. I tried this upon recommendation from my sister, and it goes well on top of the cashew nacho cheese.

Ingredients:

Cashew Nacho Cheese

Cashew Sour Cream

Small handful of fresh or jar jalapenos

Small handful of shredded chao or other store bought cheese

1/4 cup of Beyond Meat (or other brand, gardein is one) crumbled “beef”

1/4 cup of shredded lettuce

1/4 cup of diced tomato

Sprinkle of lime juice, and slices for garnish

Tortilla Chips

1 tablespoon of vegetable oil

1 teaspoon of taco seasoning

1/4 teaspoon of garlic powder

1/4 teaspoon of onion powder

Cashew Sour Cream Recipe

Ingredients:

½ cup of cashews

¼ cup of water

Juice of half a lemon

2 tablespoons of vinegar

Directions:

Soak your cashews for 2 hours

Blend the ingredients until you have the consistency you want, and enjoy.

Cashew Nacho Cheese Recipe

Ingredients:

1 cup of cashews

Juice of half a lemon

2/3 cup of water

½ teaspoon of salt

1 teaspoon of turmeric or a sprinkle of turmeric (to make it yellow)

2 tablespoons of nutritional yeast

¼ teaspoon of onion powder

¼ teaspoon of garlic powder

¼ teaspoon of cayenne

Directions:

Soak your cashews for 2 hours

Blend the ingredients until you have the consistency you want, and enjoy.

Directions:

Warm your cashew nacho cheese in a small sauce pan or microwave, until it is hot. Do not overcook. On a plate of chips, pour first your cashew cheese and then sprinkle on top your shredded chao. Pour your cashew sour cream on top. In a small skillet, with a tablespoon of oil heat up your beyond meat crumbles and season with taco seasoning, onion and garlic powder. Sprinkle your “beef” crumbles on top of your cheeses. Add the rest of your toppings; your tomato, lettuce, jalapenos and lime juice.
