If you are like me, and have a bag of rolled oats sitting around in your kitchen, then you’ll want to get on this recipe. If you bake every so often, there is a chance you’ll already have all these ingredients in your kitchen. If not, then it is an inexpensive recipe and your ingredients can be re-purposed into even more sweet vegan treats! These oatmeal cookies are quick, chewy and delicious.
1 cup of flour
1 flax egg
1/2 teaspoon of cinnamon
1/4 teaspoon of salt (optional)
1/2 cup of softened vegan butter (I use earth balance)
1 cup of rolled oats
1/2 cup of coconut sugar
1 tablespoon of maple syrup
1 teaspoon of baking soda
1 teaspoon of vanilla extract
In a medium sized bowl pour your flour, baking soda, salt and cinnamon. In a separate bowl mix your softened vegan butter, coconut sugar, vanilla extract, maple syrup, and flax egg. Slowly mix your wet ingredients into your dry ingredients, and then your rolled oats.
Chill your mixture for 30 minutes before scooping tablespoonfuls onto a baking sheet. Bake at 350 degrees Fahrenheit for 10-12 minutes until nice and browned.
