Vegan Pancakes

Are pancakes at 6pm considered brunch? … and now I am thinking about mimosas. 🥂

This is my favorite pancake recipe. Feel free to make it as is, or to add fruit, fruit syrup  and/or soy whip for a little something extra.

Ingredients:

1 cup of flour

1 cup of almond milk

1/4 teaspoon of salt

1 teaspoon of baking powder

A sprinkle or two of cinnamon

1/2 teaspoon of vanilla extract

1/2-1 teaspoon of agave

1 flax egg

1 tablespoon of melted earth balance vegan butter

Maple Syrup or fruit syrup (for topping)

Directions:

Mix ingredients in a small bowl, and then spread onto a lightly greased skillet or pan until they begin to bubble. Flip your pancake, and remove when lightly browned. Sprinkle with cinnamon, and enjoy!
