Mini Strawberry Vegan Cheesecakes

If you have heard the news about bachelor in paradise, then likely you are in need of a pick me up. I have got you covered. A few weeks ago I wrote a recipe for a vegan cheesecake. These are the same exact recipe, just mini because mini is better. There are a few added touches, the strawberry marble top and the mini pie crusts. This recipe makes about 12 cheesecakes.


8 oz of vegan cream cheese

1 teaspoon of vanilla extract

12.3 oz of silken tofu

Juice of an entire lemon

1/3 cup of coconut sugar

1 tablespoon of cornstarch

1/4 teaspoon of salt

1 tablespoon of almond milk

Ingredients for toppings:


Strawberry sauce with reserved strawberries (store bought or could be home made)


Preheat your oven at 350 degrees Fahrenheit. Mix all of your ingredients above the line, in a mixer or blender. Pour your mix into your store bought graham cracker crusts. Drop small amounts of your strawberry sauce on the crust- and with a toothpick swirl them around to create a marbled look. Place in the oven for 15-20 minutes until cracked and lightly browned. Place in the fridge for 45 minutes to an hour, and enjoy!
