This is a deliciously easy and vegan way to enjoy sushi. Making it from home! You can get a little more creative than I did, which I am hoping to do in the future and add different veggies to your sushi.
1 ripe avocado
Thinly sliced cucumber
2 nori sheets
1 cup of premium sushi rice
Sushi rolling mat
wasabi, ginger and tamari (optional)
First you will want to slice your avocado and cucumber thinly and place to the side. If you have a rice cooker, I would use that but if not then you can make your rice in a pot. I boiled 1 cup of rice, 1 cup of water and a sprinkle of salt until the water was absorbed. Wait for your rice to cool.
On your sushi rolling mat, place your nori and cover the nori with your sushi rice.
Place your fillings inside and roll your sushi pressing firmly so it remains closed.
Take your roll and slice your sushi to its desired thickness.
Serve with wasabi, ginger, soy sauce and enjoy!
